Happy Belated Halloween

and yes, that is a Christmas candle in my pumpkin...Christmas is a part of me...can't help that it comes out from time to time!
Happy Halloween, muahahaha....

A little late, I know...and I'm sure a lot of you are in Christmas mode now (I know I'm getting there), but better late than never right?

Yesterday, other than the delicious food I ate...wasn't a very exciting Halloween for me. I went to school and went to yoga and to the gym after (ran for 40 mins of the treadmill). The best part of the gym? rocking out to the Monster Mash on my iPod! Good times...

For a Halloween Breaky I had a toasted cinnamon raisin ezekiel english muffin with pumpkin spice hummus and apple spice hummus on it!

For dinner I had something so simple, yet so incredibly delicious...


Sweet potato, butternut squash, quinoa, topped off with pumpkin spice hummus and cinnamon!!!! I can't tell you how excited I am about this incredible dish! So so good!

This weekend was pretty fun too! I worked on Saturday and Francis and I went for dinner (to celebrate our 6 year anniversary) at a beautiful restaurant called Camille's in Victoria.  Honestly, best food I have ever eaten in Victoria hands down. The service was out of this world and the wine, appetizers, meals and dessert were amazing! And yes, I had all of those things :) It was quite indulgent, so I wouldn't want to eat there everyday, but it was so nice!

Sunday, Francis and I ran some errands, cleaned up the apartment and cuddled with the newest member of our family, Boston!

such a cutie pie! He is seriously the snuggliest little guy ever and SOOO fully of energy (he's only 2). We are definitely so happy to have him :)

Later that day...I decided to bake some cupcakes...


to share with my class for Halloween...


Chocolate cupcakes with cream cheese icing! I got rid of all of them, which I was extremely happy about...nothing worse than having 20 cupcakes lingering around your house...especially when you live alone :S

I also made 2 kids of hummus for the week next couple of days!

Now, here are a few recipes for you all....

Pumpkin Spice Hummus (the most delicious thing I have ever made...make it....seriously)

adapted from edibleperspective.com

  • 1.5 cups chickpeas [1, 15oz can]
  • 1 cup pumpkin puree
  • 1/4 cup raw cashew butter
  • 2 tbsp sunflower oil
  • 2 tbsp honey/maple syrup/brown rice syrup
  • 1 tsp vanilla extract
  • 1.5 tsp cinnamon
  • 1/4-1/3 tsp ginger
  • 1/8 tsp nutmeg
  • 1/16 tsp cloves
  • 1/2 tsp salt
  1. Combine all ingredients in your food processor.
  2. Blend until smooth.  Taste + adjust spices if needed.

Apple Spice Hummus (adapted from edibleperspective.com)


  • 15 oz can [1.5c] chickpeas
  • 1 1/3 cup unsweetened applesauce (I used apple butter)
  • 1 tbsp sunflower oil (I omitted this)
  • 1 tbsp honey
  • 1/4 cup raw cashew butter
  • 1 tsp molasses
  • 2-2.5 tsp cinnamon
  • 1/2 tsp salt
  • 1/8-1/4 tsp nutmeg
  • 1/16 tsp clove
  1. Blend everything together in a food processor until smooth. [A mini food processor will work, but you may need to make it in 2-3 smaller batches.]
  2. Taste + adjust spices if desired.

Also, when my sister was visiting me last week she made delicious curried red lentils!


Onions, red lentils, lots of spices (cinnamon, curry, cumin, salt, pepper etc...) with tofu, topped with raw cashews and paprika for colour! All on top of a bed of quinoa! It was delish. Thanks Nicole, you are welcome back anytime :)

  2. oh it is!! honestly, it's my absolute favourite thing right now. I eat it with a spoon! tastes like pumpkin pie!
